May 13 at 18:53 comment added Tim Nikischin @StephenOstermiller so after waiting for another while it finally worked with the setup on my webserver. Thank you so much for all your help! I posted all Info as an answer.

May 13 at 18:27 comment added Tim Nikischin @StephenOstermiller so I tried setting two entries on my webserver DNS: local.mydomain.com A to my local IP and anothersub.local.mydomain.com with A to my local IP as well. I did not use both ns.local.mydomain.com and the NS entry, but either I did not wait long enough or I didn't get it work. Though I got the local solution working luckily and I think this is suitable for me.
May 13 at 17:15 comment added Stephen Ostermiller If you are making the DNS changes on a public DNS server, I think you should remove the NS record for the local altogether.
May 13 at 15:57 comment added Tim Nikischin I also tried adding a entry for .local.mydomain.com type A with my local computers IP or tried changing the NS entry to the IP of my NAS but it did not make a difference
May 13 at 15:55 comment added Tim Nikischin I just do not understand why anothersub.local.mydomain.com is forwarding to my local computer just as it should with the configuration above but the root local.mydomain.com is not.
May 13 at 15:45 comment added Stephen Ostermiller Yes that works. The problem may also have to do with which network your phone is connected to. How are you verifying that it is on the local network and not on the cell phone network?
May 13 at 15:32 comment added Tim Nikischin So @StephenOstermiller if I would figure out the correct DNS entries, could I just enter them on my webhoster site to forward any request to local.mydomain.com to a local IP? Would this work as long as I am within my network?

May 13 at 15:24 comment added Tim Nikischin I disabled iCloud Private Relay on my iPhone and it should do the job. anothersub.local.mydomain.com is working as expected, but just the local.mydomain.com is not
May 13 at 14:55 comment added Stephen Ostermiller Local DNS changes don't get read by many devices in the age of DNS over HTTPS (DoH). Can you make these DNS changes on a public DNS server rather than on a local DNS server?
