What I think you are saying is, if you have example.com A 1.2.3.4 and example.com MX example.com, changing the A record will break the mail. "if the MX Record is a CNAME" Which is a DNS misconfiguration anyway. An MX record should NOT be pointing to a name that is a CNAME . See §2.4 of RFC 1912.
